Crop Report

Parks Blueberries are now completely harvested for the 2007 crop.
We have frozen about 1/3 of our marvelous harvest of delicious sweet blueberries. And we have our freezer filled with these blueberries to keep you supplied with beautiful blueberries for the next 10 months.

Parks FALL RASPBERRY HARVEST will BEGIN Aug.29/07 and continue until frost (usually until after Thanksgiving)

Blueberry Orange Marmalade

• 1 Orange
• 1 Lemon
• 1/8 tsp. baking soda
• 4 C Parks Blueberries
• 1 bottle liquid Pectin (6 oz.)
• 3/4 C water
• 2 1/2 C sugar

Peel rind off orange and lemon. Chop rind into small pieces. Dissolve soda in water; add rind to soda water and cook for 10 min. Remove fruit pulp from remaining fruit sections and chop, making certain no membrane is included. Add orange and lemon pulp to soda water/rind and cook an additional 15 min. Add berries and sugar. Bring to boil and simmer for 5 min. Remove from heat and stir in pectin. Stir and skim 5 min. Pour into hot sterilized containers and cover with 1/8" paraffin. Takes 1-2 days to set. Yields 4 -8oz. jars.
