Crop Report
Parks Blueberries are now completely harvested for the 2007 crop. We have frozen about 1/3 of our marvelous harvest of delicious sweet blueberries. And we have our freezer filled with these blueberries to keep you supplied with beautiful blueberries for the next 10 months.
Parks FALL RASPBERRY HARVEST will BEGIN Aug.29/07 and continue until frost (usually until after Thanksgiving)

Blueberry Banana Crumb Muffins
|
• 1 1/2 cups all purpose flour 1/3 cup packed brown sugar
• 1 tsp baking soda 1 Tbsp all purpose flour
• 1 tsp baking powder 1/8 tsp ground cinnamon
• 1/2 tsp salt 1 Tbsp butter or margarine
• 3 ripe bananas, mashed
• 1 1/2 cups Parks Blueberries
• 3/4 cup sugar
• 1 egg, lightly beaten
• 1/3 cup butter or margarine, melted
Muffins: Preheat oven
to 375 . Grease or paper-line a dozen muffin cups. Combine dry ingredients
in a large bowl. Toss in blueberries. In a separate bowl, mix bananas,
sugar, egg, and butter. Stir wet ingredients into dry, just until moistened.
Fill muffin cups 3/4s full with the batter. Topping: Mix sugar, flour
and cinnamon. Cut in butter until crumbly. Sprinkle over muffins. Bake
at 375 for 18-20 minutes or until tester comes out clean. Yield: 1 dozen
delicious muffins.
