Crop Report
Parks Blueberries are now completely harvested for the 2007 crop. We have frozen about 1/3 of our marvelous harvest of delicious sweet blueberries. And we have our freezer filled with these blueberries to keep you supplied with beautiful blueberries for the next 10 months.
Parks FALL RASPBERRY HARVEST will BEGIN Aug.29/07 and continue until frost (usually until after Thanksgiving)

Blueberry Sherbert
|
• 2 tsp. unflavoured gelatin
• 1/2 C sugar
• 1/4 C cold water
• 1 C water
• 2 egg whites
• 3 C Parks Blueberries pureed
• 1/4 C sugar
• 1/4 tsp. orange extract
Boil 1/2 C sugar and
1 C water in a small saucepan for 10 min. In the meantime soak gelatin
in cold water for a least 5 min. Remove sugar/water from heat and stir
in soaked gelatin. Beat egg whites until foamy; add 1/4 C sugar gradually
and beat until stiff and glossy. Add the hot sugar syrup in a thin stream,
beating constantly. Cool but do not freeze and then stir in fruit puree
and flavourings. Pour into a metal pan and freeze 2 hrs. Chill a large
mixer bowl and beaters while sherbert is freezing. Turn sherbert into
cold bowl and beat until smooth and fluffy. Pack into plastic tubs and
freeze.
