Crop Report

Parks Blueberries are now completely harvested for the 2007 crop.
We have frozen about 1/3 of our marvelous harvest of delicious sweet blueberries. And we have our freezer filled with these blueberries to keep you supplied with beautiful blueberries for the next 10 months.

Parks FALL RASPBERRY HARVEST will BEGIN Aug.29/07 and continue until frost (usually until after Thanksgiving)

Blueberry Sour Cream Pie

1 unbaked 9" pie shell

Filling:
• 1 C sour cream
• 2 tbsp. all purpose flour
• 3/4 C sugar
• 1 tsp vanilla extract
• 1/4 tsp salt
• 1 egg
• 2 C Parks Blueberries

Topping:
• 3 tbsp. all purpose flour
• 3 tbsp. butter
• 3 tbsp chopped pecans
• 2 tbsp. sugar

Preheat oven to 400ºF. Combine filling ingredients, except for blueberries, and beat for 5 minutes. Fold in the berries. Pour into unbaked pie shell. Bake for 25 minutes. Mix topping ingredients and sprinkle over pie. Bake an additional 10 minutes, or until golden and tester comes out clean.
