Crop Report

Parks Blueberries are now completely harvested for the 2007 crop.
We have frozen about 1/3 of our marvelous harvest of delicious sweet blueberries. And we have our freezer filled with these blueberries to keep you supplied with beautiful blueberries for the next 10 months.

Parks FALL RASPBERRY HARVEST will BEGIN Aug.29/07 and continue until frost (usually until after Thanksgiving)

Blueberry Cheesecake Trifle

• 2 x 8 oz. packages of cream cheese
• 2 cups confectioners sugar
• 1 cup sour cream
• 1 1/2 tsp vanilla extract, divided
• 1/4 tsp almond extract + 3 Tbsp or to taste
• 1/2 pint whipping cream
• 1 Tbsp sugar
• 1 baked angel food cake, torn into bite sized pieces
• 2 quarts fresh Parks Blueberries
• 3 Tbsp sugar

In a large bowl, cream the sugar and cream cheese together. Add sour cream, 1/2 tsp vanilla and 1/4 tsp almond extract. Set aside. In a separate bowl, whip together cream, 1 tsp vanilla and sugar. Fold whipped cream mixture into cream cheese mixture. Add cake pieces and set aside. Combine blueberries, sugar and almond extract (3 Tbsp, or to taste). In a large glass bowl, layer blueberries, then cake mixture. Continue to layer, topping with blueberries. Cover and chill.
