Crop Report

Parks Blueberries are now completely harvested for the 2007 crop.
We have frozen about 1/3 of our marvelous harvest of delicious sweet blueberries. And we have our freezer filled with these blueberries to keep you supplied with beautiful blueberries for the next 10 months.

Parks FALL RASPBERRY HARVEST will BEGIN Aug.29/07 and continue until frost (usually until after Thanksgiving)

Blueberry Recipes

Diane's tips

Blueberries may change color when cooked. The Blue pigment in the berries causes them to turn reddish in acids (lemon juice and vinegar). Blueberries also contain yellow pigments. In a basic environment (such as baking soda in muffin batter) these pigments are released and mix with the blue causing a greenish-blue tint. To keep your baked goods looking true blue add berries as late and as frozen as possible to a recipe will keep things looking great.

For the perfect blueberry pancakes and waffles add blueberries as soon as the batter is poured on the griddle or iron. Then the pancakes/waffle will have a terrific appearance and flip much easier. Use enough blueberries to make every mouthful terrific.
